En este monasterio imperial de san Clemente de Toledo en el s XIII comenzó el mazapán por una historia de hambruna de aquella época y las monjas que sólo tenían almendras, huevos y azúcar, lo elaboraron
Es el convento más grande y antiguo de la ciudad. Contiene muchos elementos de interés, como la portada e Iglesia de Covarrubias, el claustro procesional o la sala capitular. Además, realizan mazapán artesanal de gran calidad.
